Microgreens are young vegetable and herb seedlings harvested shortly after their first "true leaves" develop, typically 7 to 21 days after germination. They are smaller than baby greens but larger than sprouts, usually measuring about 1–3 inches tall. 

Why They Are "Great"

• Concentrated Nutrition: Gram for gram, microgreens often contain significantly higher concentrations of vitamins, minerals, and antioxidants than their mature counterparts. Research has shown levels can be 4 to 40 times higher for nutrients like vitamins A, C, E, and K.
• Disease Prevention: Their high levels of polyphenols and antioxidants are linked to a lower risk of heart disease, Alzheimer’s, type 2 diabetes, and certain cancers.
• Enhanced Bioavailability: Microgreens generally have lower levels of anti-nutrients (like phytic acid), making it easier for your body to absorb minerals like iron, zinc, and calcium compared to mature greens.
• Culinary Versatility: They offer intense, diverse flavors ranging from sweet (pea shoots) to peppery (arugula) and spicy (radish). Their vibrant colors also make them a popular gourmet garnish.
• Ease of Growing: They are incredibly efficient to grow at home, requiring minimal space and no heavy equipment—often thriving on a kitchen windowsill in just 1–2 weeks

Broccoli microgreens are nutritional powerhouses, offering concentrated vitamins (A, C, K), minerals (iron, calcium, potassium), and antioxidants,  which is up to 40 times more abundant than in mature broccoli. Their benefits include supporting immunity, brain health, digestion, and heart health, while potentially helping manage blood sugar, fighting inflammation, and offering anti-cancer properties due to high sulforaphane content, making them a potent superfood.

• Taste Fresh, crisp, and mild with light nutty undertones. Unlike mature broccoli, they lack bitterness and have a gentle peppery bite that makes them approachable for picky eaters.

• Minerals Calcium, Iron, and Magnesium (Found in concentrations up to 40 times higher than mature florets.) Potassium, and Zinc
• Other:  The "star" nutrient is Sulforaphane, which can be 10 to 100 times more concentrated in microgreens than in mature broccoli. It is highly valued for its anti-inflammatory and anti-cancer potential.
  

Spicy Salad Mix (Broccoli, Kale, Arugula, Green Mustard Collards, and Cabbage)  is a really great option for people that and to add a big kick to their salad game. Mixed microgreens are 

a nutrient-dense combination of various young vegetable and herb seedlings, offering a blend of colors, textures, and flavors from mild to spicy. Our blend had it all. Mustards and arugula to provide an extra kick, along with broccoli, kale, kohlrabi, and red cabbage.

.Amaranth microgreens are vibrant, tiny edible greens with a mild, sweet, earthy flavor (like spinach or corn) and crisp texture, packed with vitamins (K, C, E) and minerals, harvested just after the first leaves appear for use in salads, tacos, sandwiches, or as garnishes, offering concentrated nutrients and beautiful color.

Radish microgreens are fast-growing, spicy, and crunchy edible seedlings packed with vitamins (A, C, E, K) and minerals (iron, calcium, potassium) that add a peppery kick to dishes like salads, sandwiches, and sushi, offering quick, beginner-friendly nutrition and flavor.

Black Oil Sunflower are thick, juicy, and crunchy greens with a mild, nutty flavor and a fresh sunflower aroma. Known for their hearty stems and satisfying bite, they are one of the most filling microgreens available. Harvested young, these microgreens are extremely nutrient-dense and provide noticeable energy and nourishment, making them a favorite for everyday eating.
